Finished all my analysis and would like to make a legend to display the data in the map I have

In ArcMap 9 and 10 you can go to Insert > Legend in layout view, and follow the GUI to create & format the legend.

Also if you convert to graphics and ungroup you can move around and delete individual elements. – Emily Aug 16 '11 at 15:01

I also forgot to write that if you ungroup one level further and separate the symbol and the text, the text becomes editable. – Emily Aug 16 '11 at 16:28
