I have collected ground water quality samples from 50 locations in my study area. Now I have to interpolate data in ArcGIS. Which is a suitable method for ground water interpolation and why?

One does not interpolate groundwater: one interpolates data about groundwater. Because some kinds of data, like groundwater elevations, tend to have different statistical characteristics than other kinds, like chemical concentrations, the answer depends on the data. If you would edit this question to provide more information about the kind of data you have and the purpose of interpolation, you would increase the chances of getting useful answers. – whuber Nov 29 '13 at 17:27
