You don't need to update overviews for slope calculations. When you still get wrong values try to create 'traditional' mosaic from your rasters: Data Management Tools -> Raster -> Raster Dataset -> Mosaic

Try creating new Mosaic Dataset, set Pixel Type 16_BIT_SIGNED (this should cover all elevations). Then again Add Rasters with Calculate Statistics advanced option checked. Check in ArcMap if you have correct elevations.

Custom boundary (mask): You have to apply it during first process - Interpolation. When you run 'IDW' tool, at the same bottom of the tool window, click 'Environments...' button. In the 'Processing Extent' section specify your custom boundary as an 'Extent'. Then in section 'Raster Analysis' specify this boundary in 'Mask' parameter.

Reclassification: When you specify 'Input raster' 'old values' are filled with current raster values. 'new values' are integer numbers assigned to range specified in 'old values'. In your case 'old values' will be 0 - 5, 5 - 15, 15 - (max value which appeared in this column). To have only 3 ranges, you should 'Delete Entries' which you don't need.

comment Spatial Analyst - Contouring a range only
@whuber I mentioned this tool as it's flexible and generic. And of course in this case there're no barriers. 'Contour List' tool is also ok when one has to type only several contour values (but it has no option to specify interval).
