The software which reads the input file, how does it know which points belong to one polygon or another? Me thinks if you take the nodes spreadsheet and concatenate the three columns into one line of text for each point, you will have a typical format for these situations. Look up the spreadsheet help for "concatenate" and "working with text". You would save the file type as csv, although between spreadsheet programs there is inconsistency as to how new lines are made etc.

Obviously you can reverse the y and x. Also, with the text tools, you could parse out the -ve sign etc.

With regard interpolation on a meandering feature, the most practical solution is to increase the number of samples.

If you gps is ~3m for horizontal accuracy, the vertical accuracy is probably +- 10 m. What did you want to do with the elevation data? Water typically flows at 1 m fall for every 10 000 m distance. So handheld gps accuracies are not useful for hydrological work.

kml and kmz s have a limited capacity as a standalone file. Kmz s which refer to a server resource can allow Google Earth to display extensive imagey. You may need to consider what you are trying to achieve.
