could you explain what "Default Visibility" means for those of us who don't use ArcGIS Server? GeoServer assumes that you want layers to be visible or you wouldn't have published them.

the fact you are running ogrinfo is irrelevant to the question so it is off topic. As you say using echo will work as well.
