QGIS saves the layers with relative paths into the project file. If the folder structure on the PC is different than on the MAC, you will not get the same content. It might help to put data and project file into the same folder, and to avoid non-ASCII or blanks in file names.

Assuming the geolocation is given in lat/lon, the output will be in EPSG:4326. If you want another CRS, you have to add -t_srs with the target CRS you want.

If you leave the Edit mode of the layer, and zoom to the extent of the roads layer, do you get any information in the attribute table? Do you see the attribute table columns in Rightclick on the layer -> properties, Fields tab?

It would work if the grid would be equally spaced, but there are rounding errors in the coordinates. You can either fix them in Calc, or round to full meters, or use delimited text for points to be interpolated.

The output does not have to be continuos. Think of aerial/satellite imagery taken during orbiting around the Earth. This may cover only a limited part of the globe, according to the flight route and sensor width.
