I'm trying to figure out the most useful way to store and process some MODIS Vegetation Index data (MOD13Q1). Currently, I have many .hdf files that cover the same spatial area over 18 years. I plan to use the 'pyModis.convertmodis_gdal' module to reproject/convert my files to GeoTiff files prior to extracting the pixel values I'm interested in, but I guess my question is...

Should I store the reprojected GeoTiff files separately or should I create a mosaic or stack? What is the difference between a mosaic and a stack (if any)?

It seems pretty clear that mosaicking is useful for visualizing continuous or discontinuous raster images that have the same date. But my rasters cover the same spatial extent and the 'layers' would be different years (and dates within year).
