I am using two greenest pixel composite images via Google Earth Engine for a project but am unsure how to cite this data.

Do I cite it as regular Landsat data?

    I assume you would cite a paper that explains the "greenest pixel composite" or at least explain how you went about it. In that case, you would cite the base (Landsat) data, and you could cite GEE if you felt it was appropriate: doi.org/10.1016/j.rse.2017.06.031 – Jon Apr 16 at 14:27

Have you read the description of the dataset? Because in most cases, (especially products of MODIS and Landsat) the method for citing is mentioned.
