I want to stack different EVI time series (MODIS and SENTINEL 2, potentially more) of a given pixel with ui.Chart.image.series similar to this: https://developers.google.com/earth-engine/charts_image_series

However, if I merge the two different Imagecollections, the line plot shows gaps in the MODIS Line at the time points where SENTINEL scenes are available and vice versa. Is there a way to plot both products in one diagram with complete lines?

Here is an example:

var geometry =
ee.Geometry.Polygon(
    [[[17.764823319590853, -12.121184771738308],
      [17.764823319590853, -12.528371957029648],
      [18.29148042408304, -12.528371957029648],
      [18.29148042408304, -12.121184771738308]]], null, false)

As it turns out, many if not all of the options explained here: https://developers.google.com/chart/interactive/docs/gallery/linechart apply to the earth engine charts as well. So simply adding:

interpolateNulls: true

to the setOptions Dictionary solves the problem. Complete chart:

var chart1 = ui.Chart.image.series(IC_ALL,point,ee.Reducer.mean(), 250)
        .setOptions({
          title: "EVI" + " | lon/lat: " + coords.lon.toFixed(4) + ' / ' + coords.lat.toFixed(4),
          vAxis: {title: "EVI", viewWindow : {max : 1, min : 0}},
          legend: "right",
          interpolateNulls: true,
          series: {
          0: {color: 'ef00ff', lineWidth: 1, pointSize: 0}, // burn
            1: {color: '000000', lineWidth: 1, pointSize: 0},  // r_MOD
            // 4: {color: 'D3D3D3', lineWidth: 1},  // r_S2
          }
        });
