GDAL /vsicurl/ does not use range requests
Ok, after some more investigation, it turns out this issue has apparently been fixed in later versions of GDAL; 3.6.0 has this issue, 3.7.0 does not. Possibly related to https://github.com/OSGeo/gdal/...

GeoServer s3 uri with ImagePyramid plugin
I tried to configure both ImagePyramid plugin and S3GeoTiff community module and I found it isn't supported the s3 uri provided by community module also in the pyramid plugin :(
